Ingredients
  

  • 1 can 15 oz whole kernel corn, drained
  • 1 can 15 oz creamed corn
  • 1 box 8.5 oz Jiffy corn muffin mix
  • 1 cup sour cream
  • ½ cup 1 stick unsalted butter, melted
  • 1 cup shredded cheddar cheese optional, for extra flavor

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a baking dish.
  • In a bowl, mix corn, creamed corn, sour cream, butter, and muffin mix.
  • Stir until smooth. Fold in cheese or extras if desired.
  • Pour into dish and bake uncovered 45–55 minutes, until golden brown.
  • Cool slightly before serving.

Notes

Add jalapeños for a spicy twist.
Use gluten-free cornbread mix if needed.
Can be made ahead and baked later.
