Ingredients
  

  • 1 teaspoon dried basil
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for a rich flavor
  • 1 small yellow onion diced
  • 1/2 cup diced carrots
  • 2 ribs celery diced
  • 3 cloves garlic minced
  • 5 cups chicken broth for a flavorful base
  • 1 teaspoon soy sauce adds depth
  • 1 teaspoon hot sauce to taste
  • 1.25 pounds bone-in chicken breast for juiciness
  • 1.5 cups cooked rice or 3/4 cups uncooked
  • 1 tablespoon fresh parsley to garnish

Instructions
 

  • Start by cooking the rice separately so it remains fluffy and doesn't absorb too much broth. This way, leftovers stay fresh!
  • Measure your ingredients beforehand; it makes the process so much smoother!
  • Melt olive oil in a large pot over medium heat. Add diced onions, carrots, and celery, stirring them gently until they soften and become aromatic, about 4 minutes.
  • Stir in the minced garlic and allow it to release its fragrant aroma for another minute.
  • Mix in all the dried herbs, soy sauce, hot sauce, the chicken, and chicken broth. Bring it to a gentle simmer, covering partially.
  • Cook the chicken leisurely for about 15-20 minutes, as too high heat will toughen the meat. Remove it, shred it, and discard the bones.
  • Return the shredded chicken to the pot, and remember to cook and add your rice just before serving.
