Ingredients
  

  • 2 lb boneless skinless chicken breasts about 4 total
  • 0.25 cup all purpose flour
  • 0.25 cup cilantro chopped, plus more for topping
  • 2 tbsp avocado oil
  • 1 tbsp grapeseed oil
  • 1 clove garlic minced
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • 1 tbsp brown sugar or sub coconut sugar
  • 2 limes
  • 1 green onion chopped, for garnish
  • salt and pepper to taste

Instructions
 

  • Set your oven to 375°F. This step is key to ensuring everything is heated evenly when the chicken goes in.
  • In a large oven-safe pan over medium warmth, combine avocado and grapeseed oils, allowing them to heat until shimmering.
  • Mix the flour and cilantro in a bowl. Coat each chicken piece thoroughly in the mix before placing in your heated pan. Sear for around 3 minutes per side until beautifully golden. Finish with minced garlic, stirred until aromatic.
  • In a separate bowl, whisk coconut milk, broth, sugar, and juice of one lime until smooth.
  • Pour this mixture over the pan-seared chicken, letting it all mingle. Slide the pan into the oven for a 10 to 15-minute bake, checking that chicken reaches a comforting 165°F internally.
  • Out from the oven, add a final flourish of lime juice, extra cilantro, and green onions before serving.

Notes

I find this dish to be a perfect blend of flavors with the creamy coconut and fresh lime playing beautifully together. A simple, yet sophisticated meal for any night.
