Ingredients
  

  • - 4 medium zucchinis grated and drained
  • - 1 onion finely chopped
  • - 1 cup grated cheddar cheese
  • - 1 cup self-raising flour
  • - 5 eggs
  • - 200g bacon or ham diced (optional)
  • - Salt and pepper to taste
  • - 2 tbsp olive oil or melted butter optional

Instructions
 

  • Preheat oven to 180°C (350°F). Line a baking dish with parchment paper or grease lightly.
  • Grate zucchini and squeeze out excess moisture using a clean towel.
  • In a large bowl, beat the eggs. Add grated zucchini, chopped onion, cheese, flour, and bacon (if using).
  • Season with salt and pepper. Mix until just combined.
  • Pour into the prepared dish, smoothing the top. Optionally drizzle with a little olive oil or melted butter for extra golden crust.
  • Bake for 35–40 minutes or until golden and set in the center.
  • Cool slightly, then slice and serve warm or cold.

Notes

- Use a mix of cheddar and feta for a tangier taste.
- Make vegetarian by omitting bacon and adding sun-dried tomatoes or mushrooms.
- Store in the fridge for up to 4 days, or freeze slices for easy reheating.
