- 1 tbsp olive oil
- 1 medium onion diced
- 3 garlic cloves minced
- 1 lb 450 g ground beef (or turkey/chicken)
- 2 tbsp chilli powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt adjust to taste
- ½ tsp black pepper
- 1 can 28 oz / 800 g crushed tomatoes
- 2 cans 15 oz / 425 g each kidney beans, drained and rinsed
- 1 cup beef or chicken broth optional, for thinner chilli
- 1 fresh red bell pepper diced (optional garnish)
- 1 cup shredded cheddar cheese optional topping
- Tortilla chips or crusty bread for serving
Heat oil in a large pot over medium heat.
Sauté onion and garlic until fragrant.
Add ground meat, breaking it up, and cook until browned.
Stir in chilli powder, cumin, paprika, salt, and pepper.
Add crushed tomatoes and kidney beans, stirring to combine.
Reduce heat and simmer for 20–30 minutes, stirring occasionally.
Adjust seasoning to taste.
Serve hot with shredded cheese, diced peppers, or tortilla chips.
For a thicker chilli, simmer uncovered to reduce liquid.
Make it vegetarian by replacing meat with lentils or extra beans.
Freeze portions for up to 3 months for easy meal prep.
