Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 lb 450 g ground beef (or turkey/chicken)
  • 2 tbsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • 1 can 28 oz / 800 g crushed tomatoes
  • 2 cans 15 oz / 425 g each kidney beans, drained and rinsed
  • 1 cup beef or chicken broth optional, for thinner chilli
  • 1 fresh red bell pepper diced (optional garnish)
  • 1 cup shredded cheddar cheese optional topping
  • Tortilla chips or crusty bread for serving

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Sauté onion and garlic until fragrant.
  • Add ground meat, breaking it up, and cook until browned.
  • Stir in chilli powder, cumin, paprika, salt, and pepper.
  • Add crushed tomatoes and kidney beans, stirring to combine.
  • Reduce heat and simmer for 20–30 minutes, stirring occasionally.
  • Adjust seasoning to taste.
  • Serve hot with shredded cheese, diced peppers, or tortilla chips.

Notes

For a thicker chilli, simmer uncovered to reduce liquid.
Make it vegetarian by replacing meat with lentils or extra beans.
Freeze portions for up to 3 months for easy meal prep.
