- 1 tablespoon olive oil
- 1 medium onion diced
- 2 carrots sliced
- 2 celery stalks sliced
- 3 garlic cloves minced
- 6 cups chicken broth
- 1 ½ pounds chicken breasts or thighs
- 2 bay leaves
- 1 teaspoon dried thyme or 2 sprigs fresh thyme
- Salt and pepper to taste
- 1 cup egg noodles optional
- ¼ cup fresh parsley chopped
Heat olive oil in a large pot over medium heat.
Add onion, carrots, celery, and garlic. Sauté 5 minutes until softened.
Pour in chicken broth, then add chicken, bay leaves, thyme, salt, and pepper.
Bring to a boil, then reduce to a simmer. Cook 25–30 minutes until chicken is tender.
Remove chicken, shred with two forks, and return it to the pot.
Stir in noodles (if using) and cook 8–10 minutes until tender.
Discard bay leaves, adjust seasoning, and garnish with parsley before serving.
Use rotisserie chicken for a shortcut—just add it during the last 10 minutes.
A squeeze of lemon juice brightens the flavor.
For freezer storage, skip the noodles and add fresh when reheating.
