Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 lb)
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour or gluten-free flour for a gluten-free option
  • 2 tbsp olive oil
  • 1/2 cup Marsala wine dry Marsala wine recommended
  • 1/2 cup chicken broth
  • 1 cup sliced mushrooms preferably cremini or white button mushrooms
  • 2 tbsp unsalted butter or olive oil for dairy-free
  •  
  • 1 tbsp chopped fresh parsley optional, for garnish

Alternative Suggestions:

  • Dairy-free: Substitute butter with olive oil or a dairy-free butter alternative.
  • Gluten-free: Use gluten-free flour to coat the chicken.

Instructions
 

  • Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Dredge the chicken in flour, shaking off any excess.
  • Cook the Chicken: Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  • Make the Sauce: In the same skillet, add the sliced mushrooms. Cook for 5 minutes, stirring occasionally, until the mushrooms become soft and golden. Pour in the Marsala wine to deglaze the pan, scraping up any browned bits from the bottom. Allow the wine to reduce by half (about 3-4 minutes).
  • Add Broth and Butter: Pour in the chicken broth and bring it to a simmer. Stir in butter to create a smooth sauce.
  • Combine: Return the chicken breasts to the skillet. Simmer for 5-7 minutes, allowing the chicken to cook through while absorbing the flavors of the sauce. The sauce should thicken slightly.
  • Serve: Garnish with fresh parsley before serving. Enjoy your savory Chicken Marsala with your favorite side dish!

Notes

  • For added flavor, you can sprinkle a bit of garlic powder or fresh thyme along with the mushrooms for a richer taste.
