Ingredients
  

  • 1 ½ pounds boneless skinless chicken breasts (or thighs), sliced into strips
  • 3 bell peppers 1 red, 1 yellow, 1 green, thinly sliced
  • 1 large onion thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning store-bought or homemade mix of chili powder, cumin, paprika, garlic powder, salt, and pepper
  • 2 tablespoons fresh lime juice
  • 8 small flour tortillas for serving
  • Optional toppings: ½ cup shredded cheese ½ cup sour cream, 1 avocado (sliced), salsa, fresh cilantro

Instructions
 

  • Season sliced chicken with fajita seasoning and lime juice.
  • Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through. Remove and set aside.
  • In the same skillet, sauté onions and bell peppers until tender-crisp.
  • Return chicken to the skillet and toss everything together until well coated.
  • Serve hot in warm tortillas with your favorite toppings.

Notes

Marinate chicken for at least 30 minutes for deeper flavor.
Avoid overcrowding the skillet to achieve a nice char.
Works great with shrimp or beef as a variation.
