Ingredients
  

  • 4 bone-in skin-on chicken thighs (or chicken breasts)
  • 2 tablespoons olive oil
  • 1 large onion sliced
  • 1 bell pepper sliced
  • 3 garlic cloves minced
  • 1 14.5 oz can diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup black olives green olives as an alternative
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional
  • Fresh rosemary sprigs for garnish
  • Salt and pepper to taste

Instructions
 

  • Prep the Chicken: Pat the chicken thighs dry and season with salt and pepper.
  • Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, skin-side down, and cook for 4-5 minutes per side until browned. Remove and set aside.
  • Sauté Vegetables: In the same skillet, sauté onion, bell pepper, and garlic for 3-4 minutes until softened.
  • Add Tomatoes & Broth: Stir in diced tomatoes and chicken broth. Bring to a simmer.
  • Simmer Chicken: Return the chicken thighs to the pan, skin-side up. Add olives, oregano, basil, and red pepper flakes. Cover and cook on low for 25-30 minutes until the chicken is cooked through.
  • Garnish & Serve: Garnish with rosemary and serve with pasta, rice, or bread.

Notes

For a spicier version, increase the amount of red pepper flakes.
You can use boneless chicken for a quicker cooking time.
Store leftovers in the fridge for up to 3 days.
