- 4 bone-in skin-on chicken thighs (or chicken breasts)
- 2 tablespoons olive oil
- 1 large onion sliced
- 1 bell pepper sliced
- 3 garlic cloves minced
- 1 14.5 oz can diced tomatoes
- 1 cup chicken broth
- 1/2 cup black olives green olives as an alternative
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes optional
- Fresh rosemary sprigs for garnish
- Salt and pepper to taste
Prep the Chicken: Pat the chicken thighs dry and season with salt and pepper.
Brown the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, skin-side down, and cook for 4-5 minutes per side until browned. Remove and set aside.
Sauté Vegetables: In the same skillet, sauté onion, bell pepper, and garlic for 3-4 minutes until softened.
Add Tomatoes & Broth: Stir in diced tomatoes and chicken broth. Bring to a simmer.
Simmer Chicken: Return the chicken thighs to the pan, skin-side up. Add olives, oregano, basil, and red pepper flakes. Cover and cook on low for 25-30 minutes until the chicken is cooked through.
Garnish & Serve: Garnish with rosemary and serve with pasta, rice, or bread.
For a spicier version, increase the amount of red pepper flakes.
You can use boneless chicken for a quicker cooking time.
