These Cherry Pie Stuffed Cookies are the ultimate dessert mash-up—soft, buttery cookie dough wrapped around a gooey cherry pie filling. Easy to make and totally irresistible, they’re a crowd-pleaser for any occasion!
In a bowl, whisk together flour, baking soda, and salt. Set aside.
Cream butter, brown sugar, and white sugar until light and fluffy.
Add egg and vanilla extract, beat until combined.
Gradually mix in dry ingredients to form a soft dough.
Chill dough for 30 minutes.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Scoop 1 tbsp dough, flatten, add 1 tsp cherry pie filling in center.
Top with another flattened dough piece and seal the edges.
Repeat and place on baking sheet with space between each cookie.
Bake for 12–14 minutes or until edges are golden.
