Ingredients
  

  • 1 1/2 cups pitted sweet cherries roughly chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 1/4 cup Amaretto
  • 15 pieces ladyfingers
  • 8 oz mascarpone cold
  • 1/4 cup granulated sugar
  • 2 pieces egg yolks cold
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon vanilla paste or extract
  • 3/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla
  • Freeze dried cherries or cocoa powder optional

Instructions
 

  • Pit and chop the cherries before adding them to a saucepan with sugar over medium heat. Cook until the cherries release juices but still maintain texture.
  • Mix cornstarch and water, then add to cherries. Stir for 30 seconds until thickened and transfer to a bowl. Cool in the fridge.
  • Prepare the Amaretto dip for the ladyfingers by combining water and sugar in a pan over medium heat until dissolved. Cool, then add Amaretto.
  • Create the mascarpone layer by combining mascarpone, sugar, egg yolks, cream, and vanilla in a mixer. Beat until light and fluffy.
