Ingredients
  

  • 1 tbsp avocado oil
  • 1 lb lean ground beef
  • 1 large onion diced
  • 2 bell peppers diced
  • 4 cloves garlic minced
  • 4 cups gold potatoes diced, approx 1.5 lbs
  • 1 oz taco seasoning about 3 tbsp, I prefer Siete
  • 1.5 cups salsa
  • 1.5 cups Mexican blend cheese shredded, divided
  • shredded lettuce for topping
  • cilantro for topping
  • avocado for topping
  • tomatoes for topping
  • limes for topping
  • sour cream or Greek yogurt for topping

Instructions
 

  • Preheat your oven to 400°F, inviting warmth into your kitchen.
  • In a large skillet, pour in the avocado oil and heat over medium. Add the ground beef, breaking it apart with a spatula, and cook for about 4-5 minutes.
  • Stir in the diced bell peppers, onion, minced garlic, and potatoes. Mix well, cover, and let it cook for 10 minutes, stirring once to ensure even cooking.
  • After 10 minutes, remove the cover and continue cooking for another 10 minutes, stirring occasionally until the potatoes turn golden brown.
  • Once done, turn off the heat and mix in the taco seasoning, salsa, and 1 cup of cheese. Transfer to a 9x9 baking dish or keep in the skillet, topping with the remaining cheese. Bake for 10 minutes.
