Blondies:
- 1/2 cup unsalted butter melted
- 1 cup light brown sugar packed
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg optional
- 1 heaping cup chopped apples peeled, Honeycrisp or Fuji
Caramel Glaze:
- 1/4 cup unsalted butter
- 1/2 cup packed brown sugar
- 2 tbsp milk or heavy cream
- 1/2 tsp vanilla extract
- 1/2 –3/4 cup powdered sugar
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper or grease lightly.
In a large bowl, whisk together melted butter and brown sugar until smooth.
Stir in egg and vanilla.
Mix in flour, baking powder, cinnamon, nutmeg, and salt until just combined.
Fold in chopped apples.
Spread batter evenly in the pan and bake for 25–30 minutes, until set and golden. Let cool completely.
For the glaze: Melt butter in a saucepan. Stir in brown sugar and milk. Simmer for 1 minute.
Remove from heat. Stir in vanilla, then whisk in powdered sugar until smooth.
Pour glaze over blondies. Let set, then slice and serve.
Use firm apples like Honeycrisp or Granny Smith.
Add nuts like pecans or walnuts for extra crunch.
