Ingredients
  

  • 2 garlic cloves finely minced
  • 4 anchovy fillets or 2 tsp anchovy paste
  • 1 large egg yolk or 2 tbsp mayonnaise as substitute
  • 1 tsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • ½ cup freshly grated Parmesan cheese
  • ½ cup extra virgin olive oil
  • ½ tsp freshly ground black pepper

Instructions
 

  • Mince garlic and anchovies into a smooth paste.
  • In a mixing bowl, whisk together garlic, anchovies, egg yolk (or mayo), Dijon mustard, and lemon juice.
  • Add Parmesan cheese and whisk until combined.
  • Slowly drizzle in olive oil while whisking constantly to emulsify.
  • Season with black pepper and adjust lemon or cheese to taste.
  • Store in a jar, chill, and shake before serving.

Notes

Substitute mayonnaise if you prefer not to use raw egg.
Use Greek yogurt for a lighter twist.
For anchovy-free dressing, add Worcestershire sauce instead.
