Ingredients
  

  • 1 1/2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano or mixed herbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 medium potatoes washed and sliced
  • 2 tablespoons avocado oil divided
  • 500 grams lean ground beef
  • 1 cup shredded lettuce
  • 1 cup cheese dairy-free or regular
  • 1 cup pickle slices
  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard dijon or yellow
  • 1 teaspoon pickle juice from the jar
  • 1/2 teaspoon chili powder

Instructions
 

  • Combine the smoked paprika, garlic powder, onion powder, oregano, salt, and black pepper in a small bowl.
  • Wash and cut the potatoes into chips, pat them dry, then toss them with one tablespoon of avocado oil and half of the spice mix.
  • Spread the potatoes on a baking tray and cook in a preheated oven at 200°C (390°F) for about 30-40 minutes or in an air fryer until they are golden and crispy.
  • While the potatoes cook, heat the remaining avocado oil in a pan over high heat, then add the ground beef, breaking it apart until browned and cooked through.
  • In a small bowl, mix together the mayonnaise, ketchup, mustard, pickle juice, and chili powder—taste and adjust if needed.
  • To assemble, divide the crispy potatoes among bowls, add shredded lettuce, cooked beef, cheese, pickles, and drizzle with the sauce before serving.
