Ingredients
  

  • 4 cups 00 flour or all-purpose flour This gives the bomboloni a soft texture.

  • 0.5 cup whole milk Warmed, to activate the yeast properly.
  • 1 teaspoon vanilla extract Adds a beautiful flavor.
  • 2.25 teaspoons active dry yeast Make sure it's fresh for proper rise.
  • 1 small pinch salt Enhances the overall flavor.
  • 1 zest orange or lemon Optional but gives a traditional taste.
  • 0.5 cup granulated sugar or confectioners sugar For rolling the donuts after frying.
  • sunflower or vegetable oil For frying.
  • Classic Italian Pastry Cream Filling for the donuts.

Instructions
 

  • Start by combining warm milk and yeast in a large bowl. Let it sit for about 5 minutes until it becomes frothy, filling the air with a sweet, yeasty aroma.
  • Gradually mix in flour, eggs, sugar, vanilla, and optional zest until the blend becomes a shaggy dough.
  • Knead in the softened butter cubes until well incorporated, creating a smooth, slightly sticky dough that feels soft to the touch.
  • Cover the bowl with a damp cloth and let the dough rise in a warm spot for 1-2 hours. It should double in size, becoming fluffy and airy.
  • Once risen, punch down the dough gently and roll it out on a floured surface. Cut into rounds, letting them rest for another 30 minutes.
  • Heat oil in a deep pan to 350°F (175°C), then carefully fry each donut until golden brown, about 2-3 minutes per side, and let the freshly fried Bomboloni cool briefly on a wire rack.
  • Once cool, fill each donut with pastry cream and roll them in granulated or confectioners sugar before serving.
