Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 1 carrot finely chopped
  • 2 celery stalks finely chopped
  • 3 garlic cloves minced
  • 1 ½ pounds ground beef or beef & pork blend
  • 2 tablespoons tomato paste
  • 1 can 28 oz crushed tomatoes
  • 1 cup beef broth or water
  • ½ cup red wine optional
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional, for heat
  • ½ cup whole milk or heavy cream optional, for richness
  • Fresh basil or parsley chopped (for garnish)
  • Grated Parmesan cheese for serving

Instructions
 

  • Heat olive oil in a large pan. Add onion, carrot, and celery. Cook until softened.
  • Stir in ground meat and brown thoroughly, breaking up with a spoon.
  • Add garlic and tomato paste. Cook for 1–2 minutes for deeper flavor.
  • Deglaze with red wine (if using) and let it reduce slightly.
  • Add crushed tomatoes and a splash of broth. Stir well.
  • Reduce heat and simmer uncovered for 45–90 minutes, stirring occasionally.
  • Finish with fresh herbs, season with salt and pepper, and serve over pasta.

Notes

For a creamier texture, add a splash of milk or cream before serving.
Use tagliatelle for a traditional pairing, though spaghetti or penne work too.
Freezes well in portions for up to 3 months.
