2 ½  cups  all-purpose flour 1  tsp  baking powder ½  tsp  salt 1  cup  unsalted butter softened 1  cup  granulated sugar 1  large egg 2  tsp  vanilla extract ½  cup  rainbow jimmies sprinkles 1  cup  vanilla frosting homemade or store-bought Extra sprinkles for topping  
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk flour, baking powder, and salt.
In a large bowl, cream butter and sugar until fluffy (2–3 minutes).
Beat in egg and vanilla extract until combined.
Gradually mix in the dry ingredients until a dough forms.
Gently fold in rainbow sprinkles.
Scoop dough into balls and place on baking sheet.
Bake for 10–12 minutes, or until edges are lightly golden.
Cool completely, then frost with vanilla frosting.
Top with extra sprinkles and serve!
 
Chill dough for 20 minutes for thicker cookies. 
Use “jimmies” sprinkles to avoid color bleeding. 
Store in an airtight container to maintain softness.
