  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup rainbow jimmies sprinkles
  • 1 cup vanilla frosting homemade or store-bought
  • Extra sprinkles for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, whisk flour, baking powder, and salt.
  • In a large bowl, cream butter and sugar until fluffy (2–3 minutes).
  • Beat in egg and vanilla extract until combined.
  • Gradually mix in the dry ingredients until a dough forms.
  • Gently fold in rainbow sprinkles.
  • Scoop dough into balls and place on baking sheet.
  • Bake for 10–12 minutes, or until edges are lightly golden.
  • Cool completely, then frost with vanilla frosting.
  • Top with extra sprinkles and serve!

Notes

Chill dough for 20 minutes for thicker cookies.
Use “jimmies” sprinkles to avoid color bleeding.
Store in an airtight container to maintain softness.
