Ingredients
  

  • 4 croissants day old
  • 2 1/4 cups almonds sliced, blanched or roasted
  • 2 cups almond cream cold
  • almond syrup
  • 1/2 cup powdered sugar for dusting
  • 1 cup sugar plus 2 more tablespoons
  • 1/4 cup water plus 1 more tablespoon
  • 2 tablespoons almond flour or almond meal
  • 1/4 teaspoon almond extract optional
  • 1 cup almond flour or almond meal, plus 1 ½ more tablespoons
  • 1 tablespoon all-purpose flour plus 1 more teaspoon
  • 1/2 cup unsalted butter at room temperature (4.4 ounces)
  • 1 cup powdered sugar plus 1 ½ more tablespoons
  • 1/4 cup eggs plus 2 more teaspoons

Instructions
 

  • Preheat your oven to 350°F (175°C). Slice the day-old croissants in half lengthwise to prepare for filling.
  • In a mixing bowl, combine almond cream, powdered sugar, and optional almond extract until smooth. Ensure there are no lumps.
  • Spread the almond cream generously inside each croissant half, then sandwich them back together.
  • Top with sliced almonds, pressing gently, then place them on a baking sheet.
  • Bake in the preheated oven for about 20 minutes or until golden brown and aromatic.
