Beet Salad Recipe with Feta and Cucumbers

Ingredients
  

  • 4 medium beets
  • 1 large cucumber
  • 1 cup feta cheese, crumbled
  • 1 small red onion, thinly sliced
  • 3 tbsp olive oil
  • 1 tbsp lemon juice

Instructions
 

  • Preheat oven to 400°F (204°C) and wrap beets in foil.
  • Roast beets for 45-60 minutes until tender.
  • Slice cucumbers and onion while beets cool.
  • Once cool, peel and chop beets into bite-sized pieces.
  • Combine all ingredients in a bowl, drizzle with olive oil and lemon juice.

Notes

Great for meal prep and enjoy up to 3 days when stored in the fridge.
