- 2 lbs beef chuck cut into cubes
- 2 tbsp olive oil
- 1 large onion diced
- 3 carrots sliced
- 3 garlic cloves minced
- 2 cups red wine such as Burgundy
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 lb mushrooms sliced
- 2 bay leaves
- 1 tsp dried thyme or fresh sprigs
- Salt and black pepper to taste
- Fresh parsley for garnish
Heat olive oil in a large pot. Sear beef cubes until browned on all sides. Remove and set aside.
Add onion, carrots, and garlic to the pot. Sauté until softened.
Stir in tomato paste, then deglaze the pot with red wine, scraping the bottom.
Add beef broth, thyme, bay leaves, and return beef to the pot. Season with salt and pepper.
Cover and simmer on low for 2–3 hours, until beef is tender.
In a separate pan, sauté mushrooms in a little oil, then stir them into the stew before serving.
Garnish with fresh parsley and serve with mashed potatoes, noodles, or crusty bread.
Use a good-quality red wine, as it defines the sauce’s depth of flavor.
Beef bourguignon tastes even better the next day as flavors meld.
For a thicker sauce, stir in 1 tbsp cornstarch mixed with water near the end of cooking.
