Ingredients
  

  • 2 lbs beef chuck cut into cubes
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 carrots sliced
  • 3 garlic cloves minced
  • 2 cups red wine such as Burgundy
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 lb mushrooms sliced
  • 2 bay leaves
  • 1 tsp dried thyme or fresh sprigs
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a large pot. Sear beef cubes until browned on all sides. Remove and set aside.
  • Add onion, carrots, and garlic to the pot. Sauté until softened.
  • Stir in tomato paste, then deglaze the pot with red wine, scraping the bottom.
  • Add beef broth, thyme, bay leaves, and return beef to the pot. Season with salt and pepper.
  • Cover and simmer on low for 2–3 hours, until beef is tender.
  • In a separate pan, sauté mushrooms in a little oil, then stir them into the stew before serving.
  • Garnish with fresh parsley and serve with mashed potatoes, noodles, or crusty bread.

Notes

Use a good-quality red wine, as it defines the sauce’s depth of flavor.
Beef bourguignon tastes even better the next day as flavors meld.
For a thicker sauce, stir in 1 tbsp cornstarch mixed with water near the end of cooking.
