Ingredients
  

  • 1 cup cottage cheese
  • 2 ripe bananas
  • 2 large eggs
  • 1 cup oats
  • 1 teaspoon baking powder

Instructions
 

  • In a blender, combine cottage cheese, ripe bananas, and eggs. Blend until smooth.
  • Add oats and baking powder to the blender, and pulse until just mixed. Allow the batter to rest for 5 minutes.
  • Preheat a non-stick skillet over medium heat. Pour 1/4 cup of batter into the skillet; cook until bubbles form, about 3-4 minutes.
  • Flip the pancake and cook for an additional 2-3 minutes until golden brown.
  • Serve warm with your favorite toppings.

Notes

Adjust sweetness by adding maple syrup or honey if desired.
