Ingredients
  

  • 1.5 lbs baby potatoes halved
  • 2 tbsp olive oil
  • 1 oz ranch seasoning mix 1 packet
  • Salt & pepper to taste
  • 6 slices cooked bacon chopped
  • cups shredded cheddar cheese
  • 1 jalapeño sliced (optional)
  • 2 tbsp chopped green onions
  • Heavy-duty aluminum foil

Instructions
 

  • Preheat grill to medium-high or oven to 400°F (200°C).
  • In a bowl, toss potatoes with olive oil, ranch seasoning, salt, and pepper.
  • Divide mixture among 4 foil sheets and wrap tightly into sealed packets.
  • Grill or bake for 25–30 minutes until potatoes are tender.
  • Open foil packs carefully, sprinkle with bacon and cheese.
  • Reseal loosely and cook 5 more minutes until cheese melts.
  • Garnish with sliced jalapeños and green onions. Serve hot.

Notes

For extra crispiness, open foil completely during the last 5 minutes and broil or grill directly. Add diced grilled chicken for a full meal.
