- 2 ½ cups all-purpose flour
- 1 cup unsalted butter cold and cubed
- 1 tsp salt
- 6 –8 tbsp ice water
- 6 medium apples Granny Smith or Honeycrisp, peeled and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp lemon juice
- 2 tbsp all-purpose flour for filling
- 1 egg beaten (for egg wash, optional)
- 1 tbsp coarse sugar optional topping
In a large bowl, mix flour and salt. Cut in cold butter until crumbly.
Add ice water gradually until dough forms. Divide in half, wrap, and chill for 1 hour.
In another bowl, mix apples, sugars, cinnamon, nutmeg, lemon juice, and flour.
Roll out one dough half and fit into a 9-inch pie dish. Add apple filling.
Roll out second dough, place on top. Seal and crimp edges. Cut slits in the top.
Brush with egg wash and sprinkle with coarse sugar (if using).
Bake at 400°F (200°C) for 50–60 minutes, until golden and bubbling.
Cool for at least 2 hours before slicing and serving.
Use a mix of apple varieties for deeper flavor.
