Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • 1 tsp salt
  • 6 –8 tbsp ice water
  • 6 medium apples Granny Smith or Honeycrisp, peeled and sliced
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp all-purpose flour for filling
  • 1 egg beaten (for egg wash, optional)
  • 1 tbsp coarse sugar optional topping

Instructions
 

  • In a large bowl, mix flour and salt. Cut in cold butter until crumbly.
  • Add ice water gradually until dough forms. Divide in half, wrap, and chill for 1 hour.
  • In another bowl, mix apples, sugars, cinnamon, nutmeg, lemon juice, and flour.
  • Roll out one dough half and fit into a 9-inch pie dish. Add apple filling.
  • Roll out second dough, place on top. Seal and crimp edges. Cut slits in the top.
  • Brush with egg wash and sprinkle with coarse sugar (if using).
  • Bake at 400°F (200°C) for 50–60 minutes, until golden and bubbling.
  • Cool for at least 2 hours before slicing and serving.

Notes

Use a mix of apple varieties for deeper flavor.
Store-bought pie crust works as a quick alternative.
Let the pie cool completely to avoid runny filling.
