Ingredients
  

  • 1.5 pounds thin-sliced boneless skinless chicken breasts
  • 1/2 cup ketchup
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup light brown sugar packed
  • 3 tablespoons avocado oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 fresh pineapple cleaned, cored, and sliced into spears
  • thinly sliced green onions optional for garnish

Instructions
 

  • In a large zip-top bag, mix together all ingredients except for the pineapple and green onions, making sure to coat the chicken well. Seal the bag and keep it in the refrigerator for at least 30 minutes to let the flavors infuse.
  • Preheat your grill to medium-high heat and brush the grates lightly with oil.
  • Place the marinated chicken on the grill. Dunk the pineapple spears into the marinade before placing them on the grill as well.
  • Grill the chicken for about 5 minutes on the first side with the lid closed, then flip it. Cook for an additional 4 to 5 minutes on the second side or until the chicken is fully cooked through.
  • Rotate the pineapple every couple of minutes to ensure even grilling. Once cooked, serve the chicken garnished with green onions if desired.
