Description

These vibrant, festive cookies are perfect for celebrating St. Patrick’s Day! With their chewy texture and green color, they’re a fun treat that everyone will love. Whether you’re baking with kids or looking for a quick and easy dessert for your celebration, this recipe is the way to go!

Ingredients

  • 1 box (15.25 oz) white cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/4 teaspoon Kelly green gel food coloring (or your choice of green food coloring)
  • 3 tablespoons granulated sugar
  • 6 tablespoons powdered sugar

Possible Alternatives:

  • Gluten-Free: Use a gluten-free cake mix.
  • Dairy-Free: Substitute vegetable oil for coconut oil or any other dairy-free oil.

Instructions

  1. Prepare the Dough: In a large bowl, combine the cake mix, eggs, and vegetable oil. Stir well until the dough is smooth and sticky.
  2. Add Color: Stir in the green food coloring until the dough is evenly colored.
  3. Chill the Dough: Cover the dough with plastic wrap and refrigerate for at least 30 minutes. This helps the cookies keep their shape while baking.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Roll the Dough: Scoop out 1-tablespoon portions of dough and roll them into balls. Roll each ball first in granulated sugar, then in powdered sugar to coat evenly.
  6. Bake the Cookies: Place the dough balls on the baking sheet, spaced 2 inches apart. Bake for 9-12 minutes or until the edges are slightly golden and the tops crack.
  7. Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • Chilling the dough is essential to help the cookies hold their shape and prevent them from spreading too much during baking.
  • For a minty twist, you can add 1/2 teaspoon of mint extract to the dough.
  • If you prefer a crispier texture, flatten the dough balls slightly before baking.
  • These cookies make great gifts! Just package them in cute boxes or bags for friends and family.
