  • Water or Broth: 1/4 cup

Instructions

  • Prepare the Beef:
    Thinly slice the beef against the grain. Marinate it in a mixture of 1 tablespoon soy sauce, 1/2 teaspoon black pepper, and cornstarch for 20 minutes.
  • Prep the Sauce:
    In a small bowl, combine the remaining soy sauce, oyster sauce, sugar, and water. Stir until smooth.
  • Heat the Pan:
    Use a wok or large skillet. Heat 1 tablespoon of oil over medium-high heat.
  • Cook the Beef:
    Add the beef in batches, searing for 1–2 minutes per side. Remove and set aside.
  • Sauté Aromatics:
    Add the remaining oil, then toss in garlic and ginger. Stir-fry for 30 seconds until fragrant.
  • Cook the Vegetables:
    Add the bell peppers and onions. Stir-fry for 2–3 minutes until slightly tender but still crisp.
  • Combine Everything:
    Return the beef to the pan. Pour in the sauce and toss to coat. Simmer for 2 minutes until the sauce thickens and the ingredients are well combined.
  • Finish with Black Pepper:
    Sprinkle freshly ground black pepper to taste. Adjust seasonings as needed.
