Passover Potato Pie

Ingredients

  • 4 large potatoes, peeled and grated
  • 1 medium onion, finely diced
  • 3 eggs
  • 1 cup matzah meal
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: parsley and paprika for garnish

Instructions

1. Preheat Your Oven and Dish: Preheat the oven to 375degF (190degC), while greasing a baking dish with olive oil.

2. Grate and Drain Your Potatoes: To reduce moisture retention from grated potatoes, squeeze them out using a towel after each round of grating.

3. Combine Ingredients: Mix potatoes, onion, eggs, matzah meal and any desired spices or seasonings together in a large bowl before stirring into your prepared baking dish evenly before drizzled olive oil over the surface and baking for 40-50 minutes or until it becomes golden-brown and crunchy.

4. Garnish as desired: To add even more color and flavor, garnish your plate with fresh parsley leaves or sprinkle paprika for extra pizzazz!
