This meatloaf recipe is the perfect blend of savory, hearty, and comforting flavors. It uses simple ingredients, making it a must-try for busy weeknights or when you need a classic home-cooked meal. The beauty of this dish lies in its versatility, allowing you to modify the recipe to your taste and dietary preferences. Whether you’re craving something leaner with turkey or a spicier kick, this meatloaf recipe will surely become a family favorite. Serve it with mashed potatoes, veggies, or a fresh salad for a complete meal.

Ingredients

  • 1 ½ pounds ground beef (or turkey for leaner option)

  • 1 egg

  • 1 cup breadcrumbs (use gluten-free breadcrumbs if needed)

  • ½ cup milk (dairy-free options: almond, oat milk)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • ½ teaspoon dried oregano

  • ½ teaspoon dried thyme

  • ½ cup ketchup (for topping)

Optional Substitutions:

  • Ground turkey or chicken for a leaner version

  • Plant-based milk (such as almond or soy milk) for a dairy-free version

  • Gluten-free breadcrumbs or oats for a gluten-free option

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  • In a large bowl, mix together ground beef (or turkey), egg, breadcrumbs, milk, chopped onion, minced garlic, salt, pepper, oregano, and thyme.

  • Mix until combined, being careful not to overwork the meat (this helps prevent it from becoming tough).

  • Transfer the meat mixture to the prepared baking sheet or loaf pan. Shape it into a loaf, making sure it is evenly packed.

  • Spread ketchup on top for added flavor and moisture.

  • Bake in the preheated oven for 60-70 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

  • Let the meatloaf rest for 10 minutes before slicing. Serve with your favorite sides.

Notes

Make It Spicy: Add a teaspoon of red pepper flakes or a dash of hot sauce to the mix for a spicy kick.

Sweet Variation: You can also top your meatloaf with a mix of brown sugar and ketchup for a sweet touch.

Healthier Options: Swap ground beef for ground turkey or chicken to lower the fat content, or use whole wheat breadcrumbs for added fiber.
