Ingredients

  • 1 cup shredded mozzarella cheese

Instructions

  • Cook the Meat:
    Heat a large pot over medium heat. Add the ground beef or Italian sausage and cook until browned. Break it apart with a spoon and drain excess fat.
  • Sauté Aromatics:
    Stir in the diced onion and cook for 3-4 minutes or until softened. Add minced garlic and cook for 1 minute until fragrant.
  • Build the Base:
    Pour in the tomato sauce, diced tomatoes, chicken broth, Italian seasoning, crushed red pepper flakes (if using), salt, and pepper. Stir well and bring to a simmer.
  • Cook the Noodles:
    Add the broken lasagna noodles to the pot and cook for 10-12 minutes or until tender, stirring occasionally to prevent sticking.
  • Prepare the Cheese Mixture:
    In a small bowl, mix ricotta cheese with grated Parmesan. Set aside.
  • Assemble and Serve:
    Ladle the soup into bowls, top each with a dollop of the ricotta-Parmesan mixture, and sprinkle with shredded mozzarella. Garnish with fresh basil.
