Whether you serve it as-is or with whipped cream or fresh fruit, this cake is a sure winner!

Ingredients

  • 8 oz cream cheese, softened

  • 1/2 cup vegetable oil

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/2 cup milk

Ingredient Alternatives:

  • Dairy-Free: Use non-dairy cream cheese and almond or oat milk.

  • Gluten-Free: Substitute all-purpose flour with a gluten-free flour blend.

  • Low-Sugar: Use a sugar substitute like Stevia or monk fruit sweetener.

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.

  • Mix the cream cheese and oil: In a large mixing bowl, beat together the softened cream cheese and vegetable oil until smooth and creamy.

  • Add sugar: Gradually add the sugar to the cream cheese mixture and continue to beat until it becomes light and fluffy.

  • Incorporate the eggs: Beat in the eggs one at a time, ensuring each one is fully combined before adding the next. Stir in the vanilla extract.

  • Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

  • Add dry ingredients: Gradually mix the dry ingredients into the cream cheese mixture, alternating with the milk. Start and end with the dry ingredients. Mix until just combined—do not overmix.

  • Bake the cake: Pour the batter into the prepared pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  • Cool the cake: Allow the cake to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Notes

  • For a smoother texture: Ensure the cream cheese is softened to room temperature before mixing to avoid lumps.

  • Flavor Additions: Add a teaspoon of lemon zest, orange zest, or even chocolate chips for extra flavor.

  • Serving Suggestions: This cake pairs wonderfully with a dollop of whipped cream or a drizzle of caramel sauce.

  • Storage: Keep leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to 1 week.
