Description

These cottage cheese brownies combine the richness of traditional brownies with the creamy texture of cottage cheese, creating a dessert that’s both indulgent and lighter than the usual treat. With a moist, fudgy center and a slight tang from the cottage cheese, this recipe is a delicious way to satisfy your brownie cravings without the extra heaviness. Perfect for those looking for a healthier twist on a classic dessert!

Ingredients

  • 1 cup cottage cheese (low-fat or fat-free for a lighter version)
  • 1/2 cup sugar (adjust to taste)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 cup butter (or coconut oil for a healthier option)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • A pinch of salt

Instructions

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal.
  • Blend the cottage cheese: In a medium-sized bowl, blend the cottage cheese using a hand mixer or a food processor until it’s smooth and creamy.
  • Prepare the wet ingredients: In a large bowl, melt the butter and whisk together with sugar, eggs, and vanilla extract until smooth and well combined.
  • Combine cottage cheese with the wet mix: Add the blended cottage cheese to the wet ingredients and mix until fully incorporated.
  • Combine dry ingredients: In another bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  • Mix dry and wet ingredients: Gradually fold the dry ingredients into the wet mixture. Stir until just combined. Be careful not to overmix.
  • Pour and bake: Pour the brownie batter into the prepared pan and spread evenly. Bake for 25–30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  • Cool and serve: Allow the brownies to cool completely before slicing them into squares. For an added touch, dust with powdered sugar or drizzle with chocolate syrup.

Notes

  • Storage: Store the brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. These brownies also freeze well for up to 3 months.
  • Customizations: Feel free to add chocolate chips, nuts, or berries for an extra burst of flavor. Swirl in some peanut butter for a fun twist!
