  • 1 lb (450g) beef stew meat, cut into chunks

  • 2 tablespoons olive oil

  • 3 medium potatoes, peeled and cubed

  • 2 celery stalks, chopped

  • 4 cups beef broth

  • 1 cup red wine (optional, can be replaced with more beef broth)

  • 1 bay leaf

  • 1 teaspoon dried thyme

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 tablespoon cornstarch (optional, to thicken)


Instructions

  • Brown the Beef: Heat olive oil in a large pot over medium-high heat. Add the beef chunks and cook until browned on all sides. This step adds a rich flavor to the stew.

  • Sauté Vegetables: Add diced onion and minced garlic to the pot. Sauté for 3-4 minutes, or until softened.

  • Add Broth & Seasonings: Pour in beef broth, red wine (if using), carrots, potatoes, celery, bay leaf, thyme, salt, and pepper. Stir to combine.

  • Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.

  • Thicken (Optional): If you prefer a thicker stew, mix cornstarch with 2 tablespoons of water to form a slurry. Stir it into the stew and cook for an additional 5-10 minutes until it thickens.
